
Smoked Wings
2 pounds chicken wings (Whole or Meat Therapy Preference: Separated)
Favorite Wing Rub (Meat Therapy Preference: Meat Church Holy Voodoo)
Favorite Wing Sauce, if desired
Step 1
If you have the capabilities and time: Pat dry wings and place on baking rack over baking sheet. Place into fridge overnight. This will help to dry out the skin and help for a better crisp. If you do not have this capability, make sure to pat dry.
Step 2
Rub down the wings with Meat Church Holy Voodoo or your favorite rub. Let sit for 30 minutes or put back in the fridge for 2 hours if able.
Step 3
Prepare smoker at 190° w/Hickory or a lighter smoking pellet/wood like maple or cherry. Place wings onto smoker until they reach an internal temp of 160° (about 1.5 hours)
Step 4
Remove from smoker and get heat up to 450° Put wings back on for 15 minutes flipping halfway through. Remove wings, sauce and toss if desired. Serve up and enjoy!
